I love food. And I really love to cook for my family and my friends - especially the dishes that I know I can ace. When I travel, I’m continually compelled to book cooking lessons in professional kitchens that are mildly anxiety inducing the night before class begins… will I understand the chef? can I really filet a fish? am I going to have to work with a partner? will I be shamed for my inadequate knife cuts? The reality is far more gratifying and far less scary… often getting access to the very best ingredients, techniques, and occasionally, a chef with a good sense of humor.
Below, some dishes that I actually made, en classe, with the former executive chef of the Ritz-Carlton Paris (he left to start his own restaurant, but I’m still waiting to hear what it is). All were made with ingredients we purchased at the local farmers market that morning. Also included, a few of my favorite dishes that I simply ate and enjoyed with the intent to recreate at home - or just go back and eat them again!
